This chickpea salad is probably my favorite thing to eat for lunch. It's healthy, refreshing, and soooooo delicious. Also, there's always leftovers for two days - perfect for when you have a busy week!
What You'll Need:
+ 1 Can of Chickpeas
+ 1 Red, Orange, and Yellow Pepper
+ 1 Large Celery Stalk (or 3 small ones)
+ 3 Green Onions
+ 3 tbsp of Honey Mustard (store bought or I make my own sometimes - 1/4 cup of Dijon Mustard, 2 tbsp of Honey, 1 tbsp of Olive Oil)
+ 2 tsp of Dill Seasoning
+ 1 tsp of Lemon Juice
+ 1 Clove of Garlic or 1 tsp of Minced Garlic
1. Rinse chickpeas and transfer to a large bowl. Mash chickpeas with potato masher.
2. Dice up peppers, onions, and celery then transfer to large bowl.
3. Add in honey mustard, lemon juice, dill, garlic, salt, and pepper.
4. Mix and enjoy!
(I put some on gluten free toasted bread or you can eat it alone)
